As far as I know, Westbrook University is accredited and offers several different degree programs (http://www.westbrooku.edu/index.htm). I think that the Huntington College of Health Sciences is as well (http://www.hchs.edu/index.html).

I'm also looking to pursue a similar path, and I'm entirely overwhelmed by the number of online schools there are. I really have no idea what direction to go.

I've been looking a lot at the Nutrition Therapy Institute (http://www.ntischool.com/index.html) which offers certifications, not degrees.
