the fruit is harvested at peak ripeness and is flash frozen. It is shipped to Cincinnati where the whole fruit is pureed and processed with apple, grape, pear, cherry, cranberry, raspberry, blueberry and strawberry juices and pear fruit puree to offset the bitter taste of the mangosteen\'s pericarp (the rind-- which is where an abundance of the xanthones are) Xango is pastuerized and does contain sodium benzoate (a preservative) to prevent contamination to the juice by backwash from drinking out of the bottle.
